Prepare the Filling
In a skillet over medium heat, heat the shredded chicken or beef with salt until warmed through. Remove from heat and set aside.

Fill the Tacos
Take a corn tortilla and place about 1/4 cup of the meat filling in the center. Roll it tightly and secure with a toothpick if necessary. Repeat with remaining tortillas.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Tacos
Carefully place the rolled tacos in the hot oil, frying in batches if necessary. Fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Assemble the Tacos
Remove the toothpicks (if used) and place the fried tacos on a serving platter. Top with lettuce, red cabbage, diced tomato, sour cream, and salsa.

Serve immediately with a side of guacamole.
