Rinse the rice under cold water until the water runs clear. Drain well.

Sauté Aromatics
In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and garlic, cooking until the onion is translucent.

Add the rinsed rice to the skillet, stirring frequently for about 2-3 minutes until the rice begins to turn golden.

Stir in the diced tomato, vegetable broth (or water), chili powder, cumin, and salt. Bring to a boil.

Once boiling, reduce the heat to low, cover the skillet, and simmer for 20 minutes or until the rice is tender and the liquid is absorbed.
