Prepare the Shrimp
In a large pot, bring 4 cups of water to a boil. Add salt to taste. Once boiling, add the raw shrimp and cook for about 2-3 minutes or until they turn pink and opaque. Remove from heat and drain the shrimp.

Chill the Shrimp
Transfer the cooked shrimp to an ice bath to stop the cooking process. Let them cool for about 5 minutes, then drain and set aside.

Assemble the Cocktail
On a serving platter, arrange the chilled shrimp. In a small bowl, combine the diced avocado and pico de gallo. Serve the mixture on the side along with La Mesa cocktail sauce and lemon wedges for dipping.
