Prepare the Filling
In a large bowl, combine the cooked shredded chicken, black beans, chopped onion, half of the shredded cheese, cilantro, ground cumin, garlic powder, salt, and black pepper. Mix well.

Assemble the Enchiladas
Preheat your oven to 375°F (190°C). Take one corn tortilla, fill it with about 1/4 cup of the filling mixture, and roll it up. Place it seam-side down in a greased baking dish. Repeat with the remaining tortillas and filling.

Add Sauce and Cheese
Once all the enchiladas are placed in the baking dish, pour the red enchilada sauce evenly over the top. Sprinkle the remaining shredded cheese on top.

Bake
Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Serve
Allow the enchiladas to cool for a few minutes before serving. Garnish with additional chopped cilantro if desired.
