    Prepare the Achiote Tortillas

    In a bowl, mix the tortilla flour, achiote paste, salt, and water until a soft dough forms. Divide into equal portions and roll each into a flat tortilla. Cook each tortilla on a hot skillet for about 1-2 minutes on each side until lightly browned. Set aside.

    Make the Black Bean and Corn Salsa

    In a mixing bowl, combine the corn, black beans, olive oil, salt, and pepper. Mix well and set aside to allow the flavors to meld.

    Sauté the Huitlacoche

    In a skillet over medium heat, add the huitlacoche and sauté for about 5 minutes until heated through. Season with salt and pepper to taste.

    Assemble the Tacos

    Take a tortilla, add a portion of sautéed huitlacoche, and top it with the corn and black bean salsa. Garnish with cilantro.
