Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick. Rinse the cut potatoes in cold water to remove excess starch, then pat dry with a clean towel.

Heat the Oil
In a deep frying pan or a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Carefully add a handful of the cut potatoes into the hot oil. Fry them in batches to avoid overcrowding. Fry for about 4-5 minutes or until they are golden brown and crispy.

Drain and Season
Use a slotted spoon to remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. While they are still hot, sprinkle with salt and pepper to taste.
