Prepare the Vegetables

Wash and chop potatoes, bell peppers, onions, tomatoes, mushrooms, zucchini, and squash into bite-sized pieces.

Cook the Potatoes

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped potatoes and cook for about 10 minutes until they start to soften, stirring occasionally.

Add the Vegetables

Add the bell peppers, onions, tomatoes, mushrooms, zucchini, and squash to the skillet. Stir well to combine.

Season the Mixture

Sprinkle in cumin, chili powder, garlic powder, salt, and black pepper. Stir to coat the vegetables evenly in spices.

Cook Until Tender

Sauté the mixture for about 10-12 minutes or until all vegetables are tender, stirring occasionally.

Warm the Tortillas

While the vegetables are cooking, warm the tortillas in a separate pan or microwave.
