    Prepare the Filling

    In a skillet, heat olive oil over medium heat. Add chopped onion, bell pepper, and zucchini. Sauté until vegetables are tender, about 5-7 minutes. Stir in the cooked carnitas and cook until heated through.

    Assemble the Enchiladas

    Preheat your oven to 375°F (190°C). Take a corn tortilla, add a generous amount of the carnitas and vegetable mixture in the center, roll it up tightly, and place it seam side down in a baking dish. Repeat until all tortillas are filled.

    Add Sauce and Cheese

    Pour enchilada sauce evenly over the rolled enchiladas in the baking dish. Sprinkle the shredded cheese on top.

    Bake

    Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

    Serve

    Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro before serving. Serve with a side of rice.
