Preparation

    Prepare the filling

    In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent. Add ground beef or shredded chicken, cumin, salt, and black pepper. Cook until meat is fully cooked (if using beef) or heated through (if using chicken). Set aside.

    Prepare the tortillas

    In a separate skillet, lightly warm each corn tortilla for about 30 seconds on each side until pliable.

    Assemble the enchiladas

    Fill each tortilla with the meat filling, roll tightly, and place seam side down in a baking dish.

    Add sauces and cheese

    Once all tortillas are filled and placed in the dish, pour Salsa Verde over half of the enchiladas and Salsa Colorado over the other half. Sprinkle with cheddar cheese.

    Bake

    Preheat oven to 350°F (175°C). Bake enchiladas for 20-25 minutes, until cheese is melted and bubbly.

    Serve

    Serve hot with cooked rice on the side.
