Prepare the Filling
In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent.

Cook the Meat
Add ground beef or chicken to the skillet and cook until browned and fully cooked through. Season with salt and pepper to taste.

Assemble the Enchiladas
Preheat the oven to 350°F (175°C). Take a corn tortilla, place a scoop of the meat mixture in the center, roll it up, and place seam-side down in a baking dish. Repeat with remaining tortillas.

Add Sauce and Cheese
Pour enchilada sauce over the rolled tortillas in the baking dish. Sprinkle shredded cheese on top.

Bake
Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Serve
Remove from the oven and let cool for a few minutes. Serve hot with cooked rice on the side and garnish with fresh cilantro.
