Prepare the tortillas
In a skillet, heat the cooking oil over medium heat. Lightly fry each tortilla for about 30 seconds on each side until soft. Remove and drain on paper towels.

Fill the tortillas
Take a fried tortilla and place about 1/4 cup of barbeque pork carnitas in the center. Roll the tortilla tightly around the filling and place seam side down in a greased baking dish.

Top with sauce and cheese
Once all tortillas are filled and placed in the baking dish, pour the enchilada sauce evenly over the top. Sprinkle the shredded cheese generously over the sauce.

Bake
Preheat the oven to 350°F (175°C). Bake the enchiladas for 20-25 minutes, or until the cheese is melted and bubbly.

Serve
Remove from oven, let cool for a few minutes, then serve with rice on the side.
