Prepare the Filling
In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until the onion is translucent.

Cook the Meat
Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned. Drain excess fat.

Season the Filling
Stir in black beans, cumin, chili powder, salt, and black pepper. Cook for another 5 minutes, then remove from heat.

Assemble the Enchiladas
Preheat the oven to 350°F (175°C). Spread a thin layer of enchilada sauce on the bottom of a baking dish. Take a tortilla, fill it with the meat mixture, sprinkle cheese on top, and roll it up. Place seam-side down in the baking dish.

Add Sauce and Cheese
Once all tortillas are filled and placed in the dish, pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.

Serve
Garnish with chopped cilantro before serving. Enjoy your enchiladas!
