Prepare the Beans
Rinse the pinto beans under cold water and soak them overnight in a large bowl with water.

Cook the Bacon
In a large pot, cook the bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.

Add Beans and Water
Drain the soaked beans and add them to the pot along with 6 cups of water. Bring to a boil.

Simmer the Beans
Reduce heat, cover, and let simmer for about 1.5 to 2 hours, or until the beans are tender.

Add Remaining Ingredients
Once the beans are tender, stir in diced tomato, crumbled bacon, cilantro, lime juice, salt, and black pepper. Cook for an additional 10 minutes.
