Prepare the Shrimp
In a large bowl, combine the shrimp, salt, black pepper, and lime juice. Toss well and let marinate for 15 minutes.

Heat the Oil
In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté until fragrant, about 1-2 minutes.

Cook the Shrimp
Add the marinated shrimp to the skillet. Cook for about 3-5 minutes, until the shrimp are pink and cooked through.

Add Tequila
Carefully add the tequila to the skillet. Allow it to simmer for another 2-3 minutes to cook off the alcohol and let the flavors meld.

Finish and Serve
Sprinkle with fresh parsley and serve the shrimp over a bed of cooked rice with fried potatoes on the side.
