    Prepare the Marinade

    Remove stems and seeds from guajillo and ancho chiles. Soak in hot water for about 15 minutes until softened. Blend chiles, garlic, cumin, oregano, and a cup of beef broth until smooth. Add salt and pepper to taste.

    Marinate the Beef

    In a large bowl, coat the chuck roast or brisket with the chile marinade. Cover and refrigerate for at least 2 hours, preferably overnight.

    Cook the Birria

    Preheat the oven to 300°F (150°C). Transfer marinated beef to a Dutch oven. Add the remaining beef broth and bay leaves. Cover and cook in the oven for 3-4 hours until the meat is tender.

    Shred the Meat

    Once cooked, remove the beef from the pot and shred it using two forks. Return the shredded beef to the pot with the cooking liquid.

    Prepare to Serve

    Serve the birria topped with chopped cilantro and onion, alongside lime wedges, tortillas, cooked rice, and refried beans.
