Traditional dish from the state of Jalisco. It is marinated braised beef in an adobo made of vinegar, dried chiles, herbs, and spices and cooked in a broth. Topped with cilantro and onion.

    Prepare the Marinade

    Remove the stems and seeds from the dried chiles. Soak the guajillo and ancho chiles in hot water for about 20 minutes until softened. Drain and place in a blender along with garlic, apple cider vinegar, cumin, oregano, salt, and black pepper. Blend until smooth.

    Marinate the Beef

    In a large bowl or dish, coat the beef chuck roast with the blended adobo marinade. Cover and refrigerate for at least 2 hours, preferably overnight.

    Cook the Beef

    In a large pot or Dutch oven, heat a little oil over medium heat. Add the marinated beef and sear on all sides until browned. Add beef broth, bay leaves, and additional salt to taste. Bring to a simmer.

    Simmer

    Cover the pot and reduce the heat to low. Let it simmer for about 3 hours or until the beef is tender and can be shredded easily.

    Serve

    Remove the beef from the pot and shred it with two forks. Serve the shredded beef topped with chopped cilantro and onion. Use the broth as a dipping sauce.
