    Prepare the Meatballs

    In a large bowl, combine ground beef, cooked rice, egg, minced garlic, cilantro, cumin, salt, and black pepper. Mix until well combined. Form the mixture into small meatballs, about 1 inch in diameter.

    Sauté Vegetables

    In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Add minced garlic, diced carrot, and diced zucchini, and cook for another 3-4 minutes until slightly softened.

    Stir in minced chipotle peppers, tomato sauce, and vegetable broth. Bring the mixture to a boil, then reduce the heat to a simmer.

    Cook the Meatballs

    Carefully add the meatballs into the soup. Let them simmer in the broth for about 20 minutes, or until they are fully cooked through.
