Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 2-3 minutes until it becomes translucent.

Add Remaining Vegetables
Stir in the bell pepper, zucchini, and mushrooms. Cook for an additional 5-7 minutes, stirring occasionally until the vegetables are tender.

Add Corn and Black Beans
Add the corn kernels and black beans to the skillet. Mix well and cook for 3-4 minutes until heated through.

Season the Filling
Sprinkle in cumin, chili powder, salt, and black pepper. Stir to combine and cook for another 2 minutes, allowing the spices to meld with the vegetables.

Warm the Tortillas
In a dry skillet, briefly warm each soft taco tortilla over medium heat for about 30 seconds on each side, until soft and pliable.

Place a generous spoonful of the vegetable filling in the center of each warmed tortilla.
