Method

Preparing the Meats

    Cook the NY Steak

    Season the NY steak with salt and pepper. Grill or pan-sear on medium-high heat for 4-5 minutes on each side for medium-rare. Let rest before slicing.

    Cook the Chorizo

    In a skillet, cook the chorizo over medium heat for about 5-7 minutes, breaking it apart with a spatula until fully cooked.

    Grill the Chicken

    Season the grilled chicken with salt and pepper. Grill for about 6-7 minutes on each side or until cooked through. Slice into strips.

    Prepare Carne Enchilada

    Cook the carne enchilada in a skillet over medium heat until fully cooked, about 8-10 minutes. Shred or chop into bite-sized pieces.

Making the Salsa

    Roast the Ingredients

    On a grill or under a broiler, roast the tomatoes, jalapeño, and onion until charred. Remove and let cool.

    Blend the Salsa

    In a blender, combine the roasted tomatoes, jalapeño, onion, garlic, cilantro, lime juice, and salt. Blend until smooth. Adjust seasoning to taste.

Preparing the Nopales

    Cook the Nopales

    Boil nopales in salted water for about 10 minutes until tender. Drain and set aside.

Cooking the Sides

    Prepare the Mexican Rice

    In a pot, bring 2 cups of water to a boil. Add rice, cover, and reduce heat to low. Cook for 20 minutes or until water is absorbed.

    Cook the Beans

    Heat beans in a saucepan on medium heat until warmed through, about 5-7 minutes.

    Warm the Tortillas

    Heat tortillas on a skillet for about 30 seconds on each side until warm and pliable.

Assembling the Dish

    Combine Ingredients

    In a molcajete or serving dish, layer the grilled meats, nopales, and crumble queso fresco on top.

    Serve with Salsa

    Serve the molcajete hot with a generous amount of salsa on top. Accompany with rice, beans, and warm tortillas.
