To Make the Homemade Tortillas

Mix the Dough
In a large bowl, combine the masa harina and salt. Gradually add the water, mixing with your hands until a soft dough forms. If the dough is too dry, add more water, one tablespoon at a time.

Divide the Dough
Divide the dough into 8 equal portions and roll each portion into a ball. Cover with a damp cloth to keep them moist.

Roll Out the Tortillas
Using a tortilla press or a rolling pin, flatten each ball between two pieces of plastic wrap or parchment paper to form a thin tortilla.

To Assemble the Quesadillas

Prepare the Filling
Shred the Oaxaca cheese and set aside. If using cooked meat, ensure it is diced or shredded into bite-sized pieces.

Heat the Oil
In the same skillet, add the vegetable oil and heat over medium heat.

Assemble the Quesadilla
Place one tortilla in the skillet, add a layer of Oaxaca cheese and the cooked meat on one half of the tortilla. Fold the tortilla in half to cover the filling.

Cook the Quesadilla
Cook for about 2-3 minutes on each side until the cheese is melted and the tortilla is golden brown. Remove from skillet and repeat with the second tortilla.

Serve
Cut the quesadillas into wedges and serve hot with your favorite salsa or guacamole.
