    Prepare the Ingredients

    Chop the bell peppers, zucchini, and red onion into bite-sized pieces. If using canned corn and black beans, drain and rinse them.

Cooking

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the chopped bell peppers, zucchini, and red onion. Sauté for about 5-7 minutes until they are tender.

    Add Corn and Beans

    Stir in the corn, black beans, cumin, salt, and black pepper. Cook for an additional 3-5 minutes until everything is heated through. Stir in the fresh cilantro and remove from heat.

Assembling the Burritos

    Fill the Tortillas

    Lay a flour tortilla on a flat surface. Spoon a generous amount of the sautéed vegetable filling onto the center of the tortilla.

    Add Toppings

    Top the filling with a spoonful of sour cream, shredded cheese, and salsa.

    Wrap the Burrito

    Fold in the sides of the tortilla and roll it up tightly from the bottom to the top. Ensure the filling is secured inside.
