Chicken Preparation

    Prepare the Chicken

    Start by flattening the chicken breasts to about 1/2 inch thickness using a meat mallet or rolling pin.

    Coat the Chicken

    Set up a breading station: In one bowl, place the flour mixed with salt and pepper. In a second bowl, beat the eggs. In a third bowl, add the breadcrumbs. Dip each chicken breast first in flour, then in eggs, and finally coat with breadcrumbs.

    Fry the Chicken

    In a large skillet, heat vegetable oil over medium heat. Once hot, carefully add the breaded chicken breasts. Fry each side for about 4-5 minutes until golden brown and cooked through. Remove and drain on paper towels.

Sandwich Assembly

    Prepare the Bolillo Rolls

    Slice the bolillo rolls in half horizontally. If desired, lightly toast the insides on a skillet or grill.

    Spread Refried Beans

    On the bottom half of each bolillo roll, spread a generous layer of refried beans.

    Add Mayonnaise

    Spread mayonnaise on the top half of each roll.

    Layer the Chicken and Toppings

    Place the crispy chicken on top of the refried beans. Crumble queso fresco over the chicken, followed by layers of lettuce, tomato slices, onion slices, avocado slices, and sliced jalapeños.

    Assemble the Sandwich

    Close the sandwich with the top half of the bolillo roll. Press down lightly to secure the ingredients.
