Taquitos Preparation

Prepare the Filling
In a mixing bowl, combine the shredded chicken, cheese, and salt. Mix well until the ingredients are evenly distributed.

Roll the Taquitos
Warm the corn tortillas in a skillet or microwave until pliable. Place a heaping tablespoon of the chicken and cheese mixture on one end of a tortilla. Roll the tortilla tightly around the filling and secure with a toothpick if necessary. Repeat for all tortillas.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Taquitos
Carefully place the rolled taquitos in the hot oil, a few at a time, ensuring not to overcrowd the pan. Fry for about 3-5 minutes or until golden brown and crispy. Use a slotted spoon to remove them from the oil and drain on paper towels.

Plate the Taquitos
Arrange the fried taquitos on a serving platter. Top each taquito with a dollop of sour cream, guacamole, and a spoonful of pico de gallo.
