Beef Preparation

    Prepare the Chiles

    Remove the stems and seeds from the guajillo and ancho chiles. Soak them in hot water for about 15 minutes until they are softened.

    Make the Marinade

    In a blender, combine the softened chiles, cumin, oregano, garlic cloves, and onion. Blend until smooth, adding a little of the soaking water if necessary.

    Marinate the Beef

    In a large bowl, combine the chuck roast with the marinade. Add bay leaves, salt, and black pepper. Cover and let it marinate in the refrigerator for at least 2 hours, preferably overnight.

    Cook the Beef

    Transfer the marinated beef to a large pot. Add beef broth and bring to a boil. Reduce heat to low, cover, and simmer for about 2-3 hours, or until the beef is tender and easily shredded.

    Shred the Beef

    Once cooked, remove the beef from the pot and shred it with two forks. Set aside. Reserve the broth (consomé) for serving.

    Warm the Tortillas

    In a skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.

    Fill the Tacos

    Place a portion of the shredded beef in the center of each tortilla. Top with a generous amount of Oaxaca cheese, cilantro, and diced onion.

    Serve

    Fold the tortillas and serve with lime wedges and a side of the reserved consomé for dipping.
