Salad Preparation

Prepare the Romaine Lettuce
Wash the romaine lettuce thoroughly under cold water to remove any dirt or debris. Tear the leaves into bite-sized pieces and place them in a large salad bowl.

Add Corn
If using canned corn, drain and rinse it. If using fresh or frozen corn, cook it briefly in boiling water until tender, then drain. Add the corn to the salad bowl.

Slice the Cherry Tomatoes
Cut the cherry tomatoes in half and add them to the salad bowl.

Chop the Red Onion
Finely chop the red onion and sprinkle it over the salad.

Add Cotija Cheese
Crumble the cotija cheese over the top of the salad ingredients in the bowl.
Dressing Preparation

Mix Dressing Ingredients
In a small bowl or jar, combine the olive oil, lime juice, minced garlic, Dijon mustard, Worcestershire sauce, salt, and black pepper.

Whisk or Shake
Whisk the ingredients together until well combined, or if using a jar, secure the lid and shake until the dressing is emulsified.
Assembly

Dress the Salad
Pour the dressing over the prepared salad ingredients in the large bowl.

Toss the Salad
Gently toss the salad to coat all the ingredients evenly with the dressing.

Serve
Serve the salad immediately, garnishing with extra cotija cheese if desired.
