Prepare the Shrimp
In a medium bowl, combine the shrimp, minced garlic, lime juice, salt, black pepper, and cumin. Toss to coat the shrimp evenly. Set aside to marinate for about 15 minutes.

Sauté the Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced bell pepper and onion, cooking until they are soft and slightly caramelized, about 5-7 minutes. Transfer the vegetables to a plate and set aside.

Cook the Shrimp
In the same skillet, add the remaining tablespoon of olive oil. Add the marinated shrimp and cook for about 3-4 minutes, or until they turn pink and opaque. Return the sautéed peppers and onions to the skillet, stirring to combine. Cook for an additional 1-2 minutes. Remove from heat.
Assembling the Quesadilla

Build the Quesadillas
On one half of each flour tortilla, sprinkle a layer of cheddar cheese, then spoon a portion of the shrimp and vegetable mixture over the cheese. Top with another layer of cheese, then fold the tortilla in half.

Cook the Quesadillas
Wipe the skillet clean and place it back on medium heat. Cook each quesadilla for about 3-4 minutes per side, or until the tortillas are golden brown and the cheese is melted. Repeat with remaining tortillas.
Serving

Slice and Serve
Remove the quesadillas from the skillet and let them cool for a minute. Slice each quesadilla into wedges and serve warm, optionally with salsa, guacamole, or sour cream on the side.
