Preparing the Chorizo

Cook the Chorizo
In a skillet over medium heat, add the chorizo sausage, breaking it apart with a spatula. Cook for about 5-7 minutes or until it is fully cooked and browned. Drain excess fat if necessary.
Melting the Cheese

Combine Cheeses
In a mixing bowl, combine the Oaxaca or Monterey Jack cheese and cream cheese. Stir well to mix.

Melt the Cheese
Add the cheese mixture to the skillet with the cooked chorizo. Reduce the heat to low and stir continuously until the cheeses are melted and creamy, about 3-5 minutes.
Preparing the Tortillas

Warm the Tortillas
In a separate skillet or directly over a flame, warm the corn tortillas for about 30 seconds on each side until pliable and slightly charred.
Serving

Plate the Queso Fundido
Transfer the melted chorizo and cheese mixture to a serving dish. Sprinkle with fresh cilantro and diced jalapeño if desired.

Serve the queso fundido immediately with warm corn tortillas on the side for dipping.
