Preparation

    Clean the Tripe

    Thoroughly rinse the beef tripe under cold water to remove any impurities. Cut into bite-sized pieces.

    Prepare the Broth

    In a large pot, combine the beef tripe, beef shank, and enough water to cover the meat. Bring to a boil, then reduce heat and simmer for about 2 hours or until tender.

    Soak the Chilies

    While the broth is simmering, remove the stems and seeds from the dried red chilies. Soak them in hot water for about 30 minutes until softened.

Cooking

    Make the Chili Paste

    Blend the soaked chilies with 1 cup of the broth from the pot until smooth. Set aside.

    Add Vegetables and Seasonings

    After the meat is tender, add chopped onion, garlic, diced tomato, and carrots to the pot. Stir in the chili paste, salt, black pepper, cumin, and oregano. Simmer for an additional 30 minutes.

Serving

    Prepare Serving Ingredients

    Chop the cilantro and onions for garnishing. Cut lime into wedges.

    Ladle the hot soup into bowls, and serve with chopped onions, cilantro, lime wedges, and warm corn tortillas on the side.
