Clean the Tripe
Thoroughly rinse the beef tripe under cold water to remove any impurities. Cut into bite-sized pieces.

Prepare the Broth
In a large pot, combine the beef tripe, beef shank, and enough water to cover the meat. Bring to a boil, then reduce heat and simmer for about 2 hours or until tender.

Soak the Chilies
While the broth is simmering, remove the stems and seeds from the dried red chilies. Soak them in hot water for about 30 minutes until softened.

Blend the soaked chilies with 1 cup of the broth from the pot until smooth. Set aside.
