Corn Tortilla Chips

Prepare the Tortillas
Cut the corn tortillas into triangle shapes to form chips.

Heat the Oil
In a large frying pan, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

Fry the Chips
Carefully add the tortilla triangles in batches to the hot oil. Fry for about 2-3 minutes or until they are golden brown and crispy.

Drain and Season
Remove the chips from the oil using a slotted spoon and place them on paper towels to drain excess oil. Sprinkle with salt while they are still hot.

Prepare the Refried Beans
Warm up the refried beans in a small saucepan over low heat until heated through.

Melt the Cheeses
In a bowl, combine the Monterey Jack and Cheddar cheese. Microwave or use a double boiler to melt the cheese mixture until gooey.

Assemble the Nachos
On a large platter, layer the tortilla chips. Spread the warm refried beans over the chips, followed by the melted cheese mixture.

Top with pico de gallo, guacamole, jalapenos, and dollops of sour cream as desired.
