Prepare Tortilla Chips

Cut the Tortillas
Stack the corn tortillas and cut them into triangles using a sharp knife or a pizza cutter.

Heat the Oil
In a large frying pan, heat the vegetable oil over medium-high heat until it shimmers.

Fry the Tortilla Chips
Carefully add the tortilla triangles to the hot oil in batches, frying until golden and crispy, about 2-3 minutes per side. Remove and drain on paper towels.
Prepare Toppings

Cook the Meat
In a separate pan, cook the ground beef or your choice of meat over medium heat until browned and fully cooked, about 5-7 minutes. Drain excess fat.

Heat Refried Beans
In a small saucepan, heat the refried beans over low heat until warmed through, stirring occasionally.

Prepare Pico de Gallo
If not already prepared, chop fresh tomatoes, onions, cilantro, and jalapenos to make pico de gallo. Mix in a bowl and set aside.
Assemble Nachos

Layer the Chips
On a large serving platter or baking sheet, spread out a layer of the tortilla chips.

Add Toppings
Spread a layer of warmed refried beans over the chips, followed by the cooked meat. Sprinkle Monterrey Jack and Cheddar cheese evenly on top.

Melt the Cheese
Place the assembled nachos in a preheated oven at 350°F (175°C) for about 5 minutes, or until the cheese is melted and bubbly.

Finish with Fresh Ingredients
Remove from the oven and top with pico de gallo, guacamole, jalapenos, and a dollop of sour cream.
