Cook the Meat
In a skillet over medium heat, add 1 tablespoon of olive oil. Once heated, add the meat of your choice. Sprinkle with taco seasoning, salt, and black pepper. Cook until the meat is fully cooked and no longer pink, about 5-7 minutes. Remove from heat and set aside.

Prepare the Cheese Blend
In a mixing bowl, combine the Monterey Jack and Cheddar cheese. Mix well and set aside.
Assembly and Cooking

Assemble the Quesadilla
Take one flour tortilla and place a portion of the cooked meat in the center. Top with a generous amount of the cheese blend. Place another tortilla on top.

Cook the Quesadilla
In the same skillet, add 1 tablespoon of olive oil over medium heat. Carefully place the assembled quesadilla in the skillet. Cook for about 3-4 minutes on one side, until golden brown and crispy, then carefully flip to cook the other side for another 3-4 minutes.

Cut and Serve
Once both sides are cooked and the cheese is melted, remove the quesadilla from the skillet. Let it cool for a minute, then cut it into wedges. Serve with sour cream, salsa, and fresh cilantro, if desired.
