Enchiladas Preparation

Prepare the Filling
In a mixing bowl, combine the cooked shredded chicken, cream cheese, salt, and black pepper. Mix until well combined.

Assemble the Enchiladas
Take a tortilla, add about 1/4 cup of the chicken filling, and roll it up tightly. Place the rolled enchilada seam-side down in a baking dish. Repeat with the remaining tortillas and filling.

Add Sauce and Cheese
Pour the green enchilada sauce over the top of the rolled enchiladas, making sure to cover them evenly. Sprinkle the shredded Monterey Jack cheese on top.

Bake the Enchiladas
Preheat the oven to 350°F (175°C). Bake the enchiladas for about 20-25 minutes, or until the cheese is melted and bubbly.

Cook the Rice
In a saucepan, combine the white rice and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the rice is tender and the liquid is absorbed.
