Prepare Rice

    Cook Rice

    In a medium saucepan, heat olive oil over medium heat. Add rice and cook, stirring frequently, for 2-3 minutes until lightly toasted. Add water, cumin, and salt, then bring to a boil. Reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender and water is absorbed.

Prepare Beans

    Heat Beans

    In a small saucepan, combine canned black beans with cumin and salt. Heat over medium-low heat until warmed through, about 5-7 minutes, stirring occasionally.

Cook Meat

    Cook Meat

    In a skillet over medium heat, cook the ground meat until browned and cooked through, about 7-10 minutes. Drain excess fat. Add taco seasoning and a splash of water, stirring to combine. Simmer for an additional 2-3 minutes.

Assemble Burrito

    Fill Tortillas

    Warm the flour tortillas in a dry skillet or microwave. Lay each tortilla flat and layer the cooked rice, black beans, meat, shredded cheese, sour cream, and pico de gallo in the center.

    Roll Burritos

    Fold the sides of the tortilla inwards over the filling, then roll it up from the bottom to the top, making sure the filling is secured inside.

Serve

    Serve the burritos warm with extra sour cream and pico de gallo on the side.
