Prepare the Filling
In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

Prepare Tortillas
Preheat your oven to 350°F (175°C). In a separate pan, lightly warm the corn tortillas over medium heat for about 30 seconds on each side to make them pliable.

Fill the Tortillas
Take a warmed tortilla, place about 1/4 cup of the chicken mixture in the center, then roll it up tightly. Place the rolled tortilla seam-side down in a baking dish. Repeat with remaining tortillas and filling.

Add Sauce and Cheese
Once all tortillas are filled and placed in the baking dish, pour the green enchilada sauce evenly over the top. Sprinkle the remaining shredded cheese over the sauce.

Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.

Garnish and Serve
Remove from the oven, garnish with the remaining cilantro, and let it cool for a few minutes before serving.
