Cook the Mexican Rice
In a medium saucepan, combine 1 cup of rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the rice is tender and the water is absorbed.

Prepare the Filling
In a large mixing bowl, combine the cooked Mexican rice, black beans, shredded cheese, sour cream, pico de gallo, and your choice of meat. Mix until well combined.

Assemble the Burritos
Place a tortilla on a flat surface. Spoon about 1 cup of the burrito filling onto the center of the tortilla. Fold in the sides and roll up tightly from the bottom to enclose the filling. Repeat with remaining tortillas and filling.
Topping Application

Top the Burritos with Salsa Verde
Place each assembled burrito in a baking dish. Pour salsa verde evenly over the top of each burrito.

Add Guacamole
Spoon guacamole over the top of the salsa verde on each burrito, spreading evenly.

Bake the Burritos
Preheat the oven to 350°F (175°C). Cover the baking dish with foil and bake for 15-20 minutes until heated through.
