Preparation of Tamarind

1. Prepare Tamarind

Remove the shells from the tamarind pods and place the tamarind pulp into a bowl.

2. Soak Tamarind

Add 1 cup of hot water to the tamarind pulp and let it soak for about 15 minutes to soften.

3. Mash the Tamarind

After soaking, use your hands or a fork to mash the tamarind pulp in the water until it breaks apart.

Making Agua de Tamarindo

4. Strain the Mixture

Using a fine mesh strainer or cheesecloth, strain the tamarind mixture into a large pitcher, discarding the solids.

5. Add Water and Sugar

Pour in the remaining 3 cups of cold water and add the sugar. Stir well until the sugar is completely dissolved.

6. Add Lime Juice

Stir in the lime juice for added flavor. Adjust sweetness or tartness to taste.

7. Chill and Serve

Add ice cubes to the pitcher and stir. Serve in glasses with optional lime slices and mint leaves for garnish.
