Preparation of Tamarind

    Prepare Tamarind

    Remove the shells from the tamarind pods and place the tamarind pulp into a bowl.

    Soak Tamarind

    Add 1 cup of hot water to the tamarind pulp and let it soak for about 15 minutes to soften.

    Mash the Tamarind

    After soaking, use your hands or a fork to mash the tamarind pulp in the water until it breaks apart.

Making Agua de Tamarindo

    Strain the Mixture

    Using a fine mesh strainer or cheesecloth, strain the tamarind mixture into a large pitcher, discarding the solids.

    Pour in the remaining 3 cups of cold water and add the sugar. Stir well until the sugar is completely dissolved.
