    Soak the Rice

    In a large bowl, combine the long-grain white rice and 4 cups of water. Add the cinnamon stick and let the mixture soak for at least 4 hours or overnight. This will help soften the rice and infuse it with cinnamon flavor.

Blending

    Blend the Mixture

    After soaking, discard the cinnamon stick and drain the rice. Transfer the rice and the soaking water to a blender. Blend on high speed until the rice is finely ground, about 1-2 minutes.

Straining and Mixing

    Strain the Rice Mixture

    Using a fine-mesh strainer or cheesecloth, strain the blended rice mixture into a large pitcher. Discard the solid rice particles left in the strainer.

    Add Sweeteners and Milk

    To the strained rice milk, add the sugar, vanilla extract, milk (or almond milk), and a pinch of salt. Stir well until the sugar is dissolved completely.

Serving

    Chill and Serve

    Refrigerate the horchata for at least 30 minutes before serving. Serve chilled over ice in a 16oz glass. Optionally, garnish with a sprinkle of ground cinnamon on top.
