1. Prepare the Apples
Wash and chop the fresh apples into quarters. Remove any seeds and stems.

In a large pot, add the chopped apples and water. Cook on medium heat until the apples are soft. Mash the apples to release the juice.

Using a fine mesh strainer or cheesecloth, strain the apple mixture to extract the juice into a clean container.

Once the juice is extracted, add sugar, cinnamon sticks, and cloves to the juice. Stir well to combine.
5. Fermentation
Add the yeast to the juice mixture and stir gently. Cover the container with a clean cloth and let it sit in a dark, warm place for about 1-2 weeks, allowing fermentation to occur.
6. Bottling
After fermentation, taste the cider and decide if you'd like to add more sugar or spices. Once satisfied, transfer the cider into clean bottles, leaving some space at the top. Seal the bottles.
7. Aging
Allow the bottled cider to age in a cool, dark place for at least 1 month before enjoying.
