Prepare the Base

In a large paella pan or a deep skillet, heat the olive oil over medium heat. Add the diced pork belly and cook until browned and crispy, about 5-7 minutes. Remove and set aside.

Sauté Vegetables

In the same pan, add the onion, bell pepper, and minced garlic. Sauté until the vegetables are softened, about 3-4 minutes.

Add Ham and Spices

Stir in the diced Serrano ham, thyme, rosemary, and tomato puree. Cook for another 2-3 minutes until well combined.

Incorporate Noodles

Add the fideo noodles to the pan and stir to coat them in the mixture. Cook for 2 minutes to slightly toast the noodles.

Add Stock and Cook

Pour the chicken stock into the pan and bring to a simmer. Allow to cook without stirring for 10-12 minutes, or until the liquid is absorbed and the noodles are tender.

Finish with Pork Belly and Pumpkin Seeds

Return the crispy pork belly to the pan, season with salt and black pepper to taste, and sprinkle with toasted pumpkin seeds. Cover and let it rest for 5 minutes before serving.
