Prepare the Base

In a large paella pan or a shallow skillet, heat the olive oil over medium heat. Add the chopped onion and red bell pepper, and sauté until softened, about 5 minutes.

Add Garlic and Tomatoes

Stir in the minced garlic and diced tomatoes, cooking for another 5 minutes until the tomatoes are soft.

Cook the Seafood

Add the calamari and shrimp to the pan, cooking for about 3-4 minutes until the shrimp turn pink.

Incorporate the Noodles

Stir in the fideuà noodles, paprika, and saffron. Mix well to coat the noodles with the flavors.

Add Stock and Simmer

Pour in the fish stock, and season with salt and black pepper. Bring to a boil, then reduce heat to a simmer. Cook uncovered for about 10-12 minutes until the noodles are tender and have absorbed most of the liquid.

Garnish and Serve

Remove from heat, garnish with chopped parsley, and let it rest for a few minutes before serving.
