Catalan style cod fish, potatoes, olive oil, cream and manchego cheese

Soak the salted cod in cold water for 24 hours, changing the water several times. After soaking, drain and pat dry.

Prepare the Cod

Peel and chop the potatoes into cubes. Boil in salted water until tender, about 15-20 minutes. Drain and set aside.

Cook the Potatoes

In a large skillet, heat a bit of olive oil over medium heat. Add the minced garlic and sauté until fragrant. Then, add the soaked cod and cook for about 5-7 minutes, until flaky.

Cook the Cod

In a mixing bowl, combine the cooked cod, potatoes, heavy cream, remaining olive oil, paprika, black pepper, and half of the grated Manchego cheese. Mash everything together until smooth.

Combine Ingredients

Transfer the mixture to a baking dish, sprinkle the remaining Manchego cheese on top, and drizzle with a little more olive oil. Bake in a preheated oven at 180°C (350°F) for about 20-25 minutes or until golden and bubbling.

Garnish with chopped fresh parsley before serving warm.
