    Prepare the Marinade

    In a bowl, combine the ancho chili powder, guajillo chili powder, minced garlic, oregano, cumin, apple cider vinegar, salt, black pepper, and sugar. Mix well.

    Marinate the Pork

    Place the sliced pork shoulder in a large resealable bag or bowl and pour the marinade over it. Make sure the pork is well coated. Seal the bag or cover the bowl and refrigerate for at least 4 hours, preferably overnight.

    Cook the Pork

    Preheat a grill or skillet over medium-high heat. Remove the pork from the marinade and cook until well browned and cooked through, about 8-10 minutes per side. If using a grill, you can add the chopped pineapple during the last few minutes of cooking.

    Warm the corn tortillas on the grill or in a skillet. Slice the cooked pork into small pieces and place it on the tortillas. Top with chopped onion, cilantro, and pineapple. Serve with lime wedges.
