Preparation of Pico de Gallo
1. Mix Pico de Gallo Ingredients
In a bowl, combine diced tomatoes, red onion, chopped cilantro, lime juice, and salt. Mix well and set aside.
Preparation of Chipotle Cream
2. Make Chipotle Cream
In a small bowl, mix sour cream and minced chipotle peppers until well combined. Set aside.
Cooking Quesadillas
3. Fill and Cook Quesadillas
Heat a skillet over medium heat. Spread butter or oil in the skillet. Place one flour tortilla in the skillet and sprinkle half of the shredded cheese over it. Top with the second tortilla and cook until the bottom is golden brown. Flip the quesadilla and cook the other side until the cheese is melted and the tortilla is golden brown. Remove from heat and cut into wedges.
Serving
4. Plate the Dish
Serve the quesadilla wedges topped with pico de gallo and a drizzle of chipotle cream on a plate alongside a serving of cooked rice.
