Preparing the Chicken

Marinate the Chicken
In a large bowl, combine the chicken thighs with buttermilk. Cover and refrigerate for at least 2 hours or overnight to marinate.

Prepare the Coating
In a separate bowl, mix together flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper.

Coat the Chicken
Remove chicken from buttermilk, allowing excess to drip off. Dredge in the flour mixture, pressing to adhere. Place coated chicken on a wire rack.

Heat the Oil
In a large skillet, heat vegetable oil over medium-high heat until hot.

Fry the Chicken
Carefully add chicken to the hot oil, cooking in batches if necessary. Fry for about 6-8 minutes per side until golden brown and cooked through. Transfer to a paper towel-lined plate to drain.
Making the Cashew Cream

Soak the Cashews
Soak the raw cashews in water for at least 2 hours or overnight for best results.

Blend the Cream
Drain and rinse the soaked cashews. In a blender, combine cashews, fresh water, lemon juice, and salt. Blend until smooth and creamy.
