Preparation
1. Make the Base
In a medium saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat over medium heat, stirring until the sugar is dissolved and the mixture is warm, but not boiling.
2. Whisk Egg Yolks
In a separate bowl, whisk the egg yolks until they are pale and slightly thickened. Gradually add about half of the warm milk mixture to the yolks, whisking constantly to temper the eggs.
3. Combine Mixtures
Pour the egg yolk mixture back into the saucepan with the remaining milk mixture. Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 5-7 minutes).
4. Cool and Flavor
Remove from heat and stir in the vanilla extract. Allow the mixture to cool to room temperature, then refrigerate until completely chilled (at least 2 hours).
Churning
5. Churn the Gelato
Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
6. Add Flavors
During the last few minutes of churning, add your desired flavorings (cocoa powder, fruit puree, nuts, or chocolate chips) to incorporate them into the gelato.
Freezing
7. Freeze
Transfer the gelato to an airtight container and freeze for at least 4 hours, or until firm.
