    Prepare the Masa

    In a large bowl, combine masa harina and salt. Gradually add water, mixing until a soft dough forms. If the dough is too dry, add more water, a tablespoon at a time.

    Form the Sopes

    Divide the dough into small balls, about the size of a golf ball. Flatten each ball into a thick disc, about 1/2 inch thick.

    Cook the Sopes

    Heat a skillet or griddle over medium-high heat. Cook each disc for about 2-3 minutes on each side, until lightly browned and cooked through. Remove from heat and let cool slightly.

    Assemble the Sopes

    Using your fingers, pinch the edges of each disc to create a small border. Spread a layer of refried beans on each sope, then add black beans and a scoop of cooked rice.

    Add Toppings

    Top each sope with pico de gallo, a sprinkle of cheese, salsa verde, and a drizzle of chipotle cream.

    Serve

    Serve immediately while warm, garnished with extra salsa verde and chipotle cream if desired.
