Stuffed Poblano Peppers

    Prepare the Peppers

    Preheat your oven to 375°F (190°C). Slice the poblano peppers in half lengthwise and remove the seeds and stems. Place them cut side up on a baking sheet.

    Make the Filling

    In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent. Stir in the cooked rice, black beans, corn, cumin, chili powder, salt, pepper, and cilantro. Cook for about 5 minutes until heated through.

    Stuff the Peppers

    Spoon the filling into each poblano half, packing it in gently. Top each filled pepper with shredded cheddar cheese.

    Bake

    Place the baking sheet with the stuffed peppers in the preheated oven and bake for 25-30 minutes, until the peppers are tender and the cheese is bubbly and golden.

    Serve

    Remove from the oven and let cool slightly. Serve with sour cream and lime wedges on the side.
