Prepare the Steak
Take the ribeye steaks out of the refrigerator and allow them to come to room temperature for about 30 minutes.

Season the Steak
Rub the steaks with olive oil, then season generously with salt and black pepper on both sides.

Preheat the Grill
Preheat your grill to high heat, around 450°F to 500°F (232°C to 260°C).

Grill the Steak
Place the steaks on the grill and cook for about 4-5 minutes on each side for medium-rare, or until cooked to your desired doneness.

Prepare the Toppings
While the steaks are grilling, crumble the queso fresco and chop the scallions.

Once the steaks are done, remove them from the grill and let them rest for 5-10 minutes. Slice the steaks and serve topped with queso fresco and scallions.
