Three hand-rolled filled soft corn tortillas baked to perfection. Your choice of chicken, pork, brisket, ground beef or veggie. With your choice of sauce: salsa verde, roja or mole. Topped with cheese, sour cream and served with rice & beans

Prepare the Tortillas
In the same skillet, lightly fry each corn tortilla for about 30 seconds on each side, until pliable. Remove and place on a plate.

Assemble the Enchiladas
Spread about 1/4 cup of the chicken filling in the center of each tortilla, roll tightly, and place seam-side down in a greased baking dish.

Add Sauce and Cheese
Pour salsa verde over the rolled tortillas and sprinkle with shredded cheese.

Bake
Preheat oven to 350°F (175°C) and bake enchiladas for 20-25 minutes, until cheese is melted and bubbly.

Serve
Top with sour cream and serve with rice and refried beans on the side.
