Assemble the Enchiladas
Preheat your oven to 350°F (175°C). Spread a little enchilada sauce on the bottom of a baking dish. Take a corn tortilla, fill it with the chicken mixture, roll it up, and place it seam-side down in the baking dish. Repeat with the remaining tortillas.

Add Sauce and Cheese
Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.

Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.

Serve hot with cooked rice on the side.
